By the title of this post, you already know that I’m going to be talking about something other than beauty. Today I’m going to be talking about gluten sensitivity or the proper name doctors gave me Is non-celiac gluten sensitivity. I did a post like this on blogger and I decided that I wanted to do an updated version. A lot has changed since I first did that post.
Let me give you a brief rundown on how I found out that I have a gluten sensitivity. Last year (2017) I decided to take an Intolerance test because I was always feeling bloated, tired and I had what Is called brain fog. To test for Intolerances It’s a simple blood test your doctor can do and the test shows you how your body reacts to certain foods. All of my Intolerances were 3’s which means my body reacts the highest to the food.
Gluten was on the list of the already long list of foods that I can no longer eat. So I decided that I was going to go gluten-free. This wouldn’t be the first time I went gluten-free. The first time was because I did the Rocco Dispirito diet and all of his recipes were gluten-free. But this time I had a real reason. Fast forward to 2018 and I’m about 80% gluten-free. The reason I’m 80% Is that I like to snack and not all of my snacks are gluten-free.
And some things that aren’t gluten-free don’t bother me so I eat those things In moderation. Now that you’re caught up. Non-celiac gluten sensitivity Is a real thing. Yes to some people going gluten-free Is a fad that most people do or tell you to do If you want to lose weight. Some have claimed that gluten Isn’t the culprit.
What Is non-celiac gluten sensitivity? Gluten sensitivity has been coined to describe those individuals who cannot tolerate gluten and experience symptoms similar to those with celiac disease yet lack the same antibodies and intestinal damage as seen in celiac disease.
Gluten sensitivity shares many symptoms with celiac disease. Individuals with non-celiac gluten sensitivity have non-GI symptoms, such as a headache, “foggy mind,” joint pain, and numbness in the legs, arms or fingers. For me, my symptoms are bloating, tiredness, brain fog, and pain In my legs. I have a delayed reaction when I eat something with gluten In It. typically It takes about 2-4 hours for me to feel anything and when It hits I start thinking what I ate that I didn’t know that had gluten In It. If you’re celiac chances are you feel those horrible symptoms right away.
People with gluten sensitivity would not test positive for celiac disease based on a blood test, and won’t test the same type of intestinal damage found in individuals with celiac disease. Some individuals may experience minimal intestinal damage, and this goes away with a gluten-free diet.
Because I can’t have gluten I also can’t have Wheat, spelt flour and barley. I have read a few books to understand why when I never had a problem with gluten or the foods that came back that I’m sensitive to. In one book that I was reading Wheat Belly. There Is a part of the book that says environmental or certain medications can cause food allergies and sensitivities. I don’t take medication and I don’t see how environmental could cause the sudden change In my body.
It could be my digestive tract or maybe every 5 or 7 years I can’t remember our body changes. The story goes that every 5-7 years all of our cells In our bodies are replaced by new cells and we become “new” people. By our cells changing our bodies can develop environmental allergies, food allergies or allergies to animals. For me, If that Is true I developed food allergies and food sensitivities. And let’s say It Is true then why did I develop all of my food allergies In my adulthood and not when I was younger?
